The winter was mild and rainy, making 2018 an early vintage. Throughout the growing season, mildew risk was high and required careful monitoring and management of the vineyard. However the summer was dry and warm, perfect for ripening and harvesting.
Hand harvested at the end of August 2018. Macerated 24 hours in cold settings with skins, before pressing and settling. One-week fermen- tation at 16-18°C before ageing in stainless steel tank on the lees, for 3 months.
In its very first year of production, our Sauvignon Blanc already has all the desired attributes for a great Bordeaux Blanc. A bright gold color, a remarkable aromatic power, round and refreshing on the palate. The typical Sauvignon Blanc aromas are found: citrus – pink grapefruit and lemon, and exotic fruits – passion fruit and pineapple.
