Harvested in late September 2020. Macerated in cold settings before a 15-day alcoholic fermentation at 25°C. Aged 18 months on the lees. Dosage 3%.
Tasting Notes
The second fermentation, which happens in the bottle itself, creates the “Exubérant” festive bubbles that are both delicate and refreshing. With a delightfully luscious, yet dry and fruity character of wild red berries.
